Ombre Crepe Cake

This is what happens when crepes get dressed up and go out for the night. Oo la la. #56: Ombre Crepe Cake

 

Aren’t crepes just the best thing? They are edible wrappers for delicious fillings. Savory, sweet, you name it. Fun dinner party idea: make a ton of crepes and have everyone bring their favorite filling. Let me know how it goes!

The only downside is that they are a bit time-intensive if you are making more than one batch. I made mine in a frying pan over medium-low heat, for about a minute on each side, so it took about an hour to make it through the four different cocoa batters I had lined up. Just gotta roll up your sleeves, put on a podcast and get frying.

It amazes me how quickly I run out of eggs! This recipe called for 6 eggs alone, whew. Good thing they come in cartons of 18 so you don’t have to run back to the store for a brunch scramble.

 

 

 

Before and after adding the warm milk and butter combo. It should be the consistency of thin pancake batter.

I debated doing a rainbow version, but mocha flavors were calling my name. Definitely gotta try the bright colors next time! For now, we’ve got milk chocolate batter, dark chocolate batter, and dutch-process black cocoa batter.

Had to pay closer attention for the darker batters for when they were ready to flip. Mmm chocolate pancake.

This is where it becomes a mocha – espresso whipped cream. A little vanilla, powdered sugar and espresso powder to jazz up the stiff peaks.

Layer number 1: oooh, aaah. It took a lot of self restraint to not roll it up and eat it.

Called an audible and left off the plain cocoa-free layer off. (Please appreciate one of the only football references I know how to use.)

The best part of trimming the edges off a frilly cake is having a bowl full of crepes frills with cream. Yum!

Ganache is fascinating. It’s liquid when warm and thick at room temperature. I’m assuming that’s because the butter and chocolate re-solidifies to a certain extent, but I would love to know more specifics. Let me know if you know the answer!
